There are a couple of new food trucks/huts that opened this weekend in Sligo.

The first is Debba Bakes who opened a cake stand at the Cleveragh Walking Track, opposite the sports centre. She’s there on Saturday mornings from 9am until she sells out. I bought the cakes above, all are lovely. I’d especially recommend the tart, the pastry was melt in the mouth and it was topped with caramel and shortbread, just gorgeous.

Next up is Shaka Coffee, this opens Sunday 11am at Mitchell Curley Park (off the Strandhill Road near Kevinsfort). This is the brainchild of Joe MyGlynn (Hooked) and his wife Eileen, who have teamed up with Anthony Grey (award winning restaurateur and tourism champion) and his wife Eilish. They will be serving custom blend premium coffee and the finest homemade confectionary and treats. And a couple more who opened in previous weeks:
Gleniff Coffee Kart are located at the start of the Gleniff Horseshoe Loop. I haven’t been there yet but their iced coffee looks amazing. I also love the look of their environmentally friendly butterfly paper cups. TÓSTA by local chef Conor Kent. Shligo Shtyle Toasties located at Strandhill. Open Thursday – Sunday from 10am – 5pm – or until sold out. Also open Bank Holiday Monday. Also a wee mention for Ripples in Sligo (next to the Riverside Hotel). I’ve been there a few times, I love that they are open early in the morning, so perfect for those heading to work. I was there yesterday and saw the great work going on with their outdoor dining. There are sections that are uncover (which is great considering we live in Ireland). The views looking onto the river are fabulous too.
