Harvest Soup

I had a quiet afternoon for a change and a few random vegetables knocking about the place so I decided to make soup – it’s healthier than cake 😉

As with all my recipes this is another really easy one so here you go:

  • Half an onion
  • Splash of oil
  • Two carrots
  • One parsnip
  • One sweet potato
  • One vegetable stock cube
  • Handful of herbs (optional) – (I used parsley, sage, rosemary and thyme – ooh now I’m singing 😉 )
  • One tsp Flavoured salt – I used one from Trimilawn Farm Herbs – if you are in Sligo you’ll find them at Strandhill Market
  • Water

Chop and lightly fry the onion in the oil. Chop all the other veg, I chopped mine very roughly as it gets blended at the end. I put about two pints of water in on top of the onion (I don’t have a measuring jug so I guessed). Add the veg, the herbs, stock cube and seasoning and leave to simmer until the vegetables are cooked. Give it a taste and if it needs any other seasoning just add it, mine was grand. Bung it in a blender (don’t burn your hand like I did!) It was more like a broth at this stage so I put it back in the saucepan and added about half a pint of water….and that’s it. Quick, easy and feeds two.
