I’m a little late to the party in writing this post and introducing Pasta Fresca! If you are a regular at Sligo Farmers Market you might know of their fabulous food, but they opened a shop in Sligo town earlier this year – and you just have to go and visit.

The moment you step through the bright yellow door, you will get a sense of being in Italy, and we are lucky to have them here in the town. The smell is just amazing, and you will be hungry.

Stella and David use a combination of natural Irish produce and authentic Italian pasta-making techniques to transform their locally sourced ingredients into delicious pasta shapes. Stella is from Florence in Tuscany, and she moved to Ireland some years ago and David is from Knockarea, Sligo, together they came up with the idea of Pasta Fresca!

After two years selling at the market, they opened their shop in September of this year. You can buy their award-winning fresh pasta, lasagnes, pasta sauces, Italian specialties and desserts with regularly changing specials. They also stock a variety of artisanal food products to buy from all over Italy.
I bought the most delicious Cannelloni with spinach and ricotta, it was gorgeous. There are all kinds of dishes and pasta that you can take away, including vegan and vegetarian options. You can find Pasta Fresca! on Grattan Street in Sligo town – where the Gallery Cafe was. Find their website here: https://pastafrescasligo.com/
