This is a really quick easy recipe and a great comfort food too.
250g cooked, mashed potato (you can use leftover mash from the day before or even Smash if you’ve no spuds)
Half a white onion – chopped
100g Mature cheddar cheese
Salt to taste
Optional: tomato ketchup or brown sauce (if you are feeling adventurous)
A handful of flour
Mix the potato, onion, cheese and salt well, add the flour and make the mix into flat rounds. You can fry them in butter or oil until brown, or alternatively put them on a greased baking tray in the oven. They take about 8 minutes to cook on the pan or around 15 – 20 minutes in the oven.
These are great served with a fry or just on their own.
