Now that Lucy has moved out I’m having to fend for myself and cook dinner. I always cook for the lads but Lucy used to whip up something delicious out of whatever was in the cupboard. I saw Sheerin’s Meatin Place post a stir fry photo so I got inspired.
So for the recipe:
- Rump steak from Sheerin’s Meatin Place (you’ll find them in Ballymote or at Rathcormac Market)
- One medium onion
- Two small sweet peppers
- One large mushroom (optional)
- Dessert spoon of Donegal Rapeseed Oil – Chilli
- Two teaspoons of Jordans Atlantic Sea Salt – Spice Rub
This couldn’t be easier to make, just chop the veg and fry until soft in the Rapeseed oil. Cut the steak into strips and add to the pan. Add the salt mix. If you like your steak rare you only need to cook it for a few minutes. I prefer mine well done so I cook it for about ten minutes. With the mix of the chilli oil and spice rub (my two need favourite products) you won’t need any other flavours. I served this on a bed of rice and it was fab. Well done Sheerin’s for the idea.
