Potato Cakes with a Twist

Irish potato cake

I’d run out of inspiration for dinner yesterday and got some scallions (spring onions) on special offer from Aldi. I also bought new potatoes so I made potato cakes.

I posted the photo online and a few people were looking for the recipe so here you go:

  • 500g new potatoes
  • 2 scallions
  • butter
  • 40g mature cheddar cheese (grated)
  • 1 tablespoon plain flour
  • salt and pepper to taste
  • oil for frying

Boil and mash the potatoes – I don’t peel them because frankly life is too short. You can also use left over mash for this – a great way to reduce food waste.

Chop and gently fry the scallions, don’t use the ratty bits at the ends.

Mix the onions into the mash and add a dollop of butter plus the salt and pepper. Add the cheese and give it a good old mix. Add the flour, mix again, flatten into whatever shape you like, I used a heart cutter because I love potatoes 🙂  Fry in a fairly hot pan until golden brown.

That’s it! Probably one of the easiest recipes ever. You could also add tomato ketchup to the mix or even better Guinness sauce 🙂
