Sunday Thoughts

I’ve been very bold recently, and gone quiet on the blogs and podcast. Sorry about that, it has been a busy couple of weeks, and I’m not sure if the full moon the week before last threw things a little off kilter.

There has been a lot of rushing and racing, and lots of things going on behind the scenes. In between it all, I had to remind myself to take a moment, and a pause. I made the most of a wonderful sunrise recently, and I stood beside Lough Gill, listening to the birds singing, and watching the water ripple.

It was Lucy’s birthday on the 19th, and she and Laurence came to visit. We had a lovely day, we made the most of the sunshine and we went to Strandhill for a couple of hours. Dinner was a takeaway from The New Jewel in The Crown, Tubbercurry – I’ve always wanted a curry in Tubbercurry! (they have a lot of gluten free and dairy free options by the way). I’ve been busy working on the book, alongside my book buddy, partner in crime, Louise. We are ‘Happy Out!’ That’s the name of our book, and you can read more about it on Louise’s blog.

The Taste of Sligo Food Festival was last weekend. I went along and hid behind my camera and had a lovely time. The full blog post is here, and I’ve spoken more about it on my podcast. You can listen below too:

I went to the Sligo Women in Business event this week, I wrote about it here, and I also talk about them on the podcast. They are a wonderful support for women in business, and even those who are thinking of starting a business, or for people who want to network and support others.

I spoke about being involved in a charity calendar for an animal rescue – I was thrilled to be asked, and I’m in wonderful company! I just dabble in painting, and I’m not an artist by any means, but if it helps the animals I’m happy to take part, and I’ve really enjoyed having a subject to paint. I took a trip to Castlebar last week, it’s been ages since I was there, I went mainly for the food – typical me! I had waffles in a gorgeous cafe called Pink Kreme. They also serve Japanese pancakes, bubble tea and other goodies. I visited Cafe Rua too, their deli is amazing, and I bought all kinds of goodies – and amazingly for me savoury treats! The Humbert bread is unreal, it’s focaccia bread topped with pesto, cheese and onion, just fabulous.

You might not have seen my latest idea for the blog, I’m going to feature Irish food producers, these will all be ones that I’ve tried and tested and can recommend. The first one is Moran’s Mega Jams, and you can read all about them here.

My Sligo Gift Guide is open, this was very popular last year, and got thousands of views. It depends on the level of interest as to whether it’ll go ahead this year. I might open it up to Leitrim and Roscommon, the jury is very much out at the moment, so I’ll see what happens.
