Lauren’s Patisserie Opens in Sligo Town

There’s some great news for those of you who love cakes and coffee, Lauren’s Patisserie has opened her beautiful new patisserie in Adelaide Street, Sligo town. It’s perfect for those of you heading into work, as the shop opens at 8am, so you can grab a coffee and a treat before you head to the office.

Lauren’s Patisserie is a paradise for Instagram enthusiasts, featuring a charming pink and white theme. The shop offers a delightful selection of takeaway cakes, treats, a variety of drinks, greeting cards, and much more.

Lauren has been passionate about baking since she was young girl, when she started using home baking kits in her kitchen. She trained as a pastry chef and has worked in various renowned establishments, including Gleneagles in Scotland, Ashford Castle in Ireland, Le Petit Caporal in France, and Peggy Porschen in London.  In 2017, Lauren had the honour of representing Scotland at The Culinary Olympics held in Germany.

Lauren McLoughlin, a native of Drumcliffe, in Co. Sligo,started her business in 2022, making occasion cakes, selling wholesale products, and offering an online shop for customers. On February 14th, 2025, she opened the doors on her brand-new patisserie in Sligo town. The first day was such a success and Lauren was thrilled to have sold out at lunchtime.

Lauren prides herself in using the finest ingredients including local Benbulben eggs, Irish butter and Callebaut Belgian chocolate and cocoa powder. She serves Bell Lane multi award winning speciality coffee roasted in Mullingar Co Westmeath.

Lauren’s Patisserie is open from Wednesday – Friday: 8am – 3pm and Saturday: 10am – 2pm. It’s located just beside Salon 2, and there is parking available nearby.  Visit her website here: https://www.laurenspatisserie.ie/
